Click on the 'History' tab of a page and there you can see all the versions and you can rollback or undo changes. It's a complex feature in wikis and it takes time to learn it, but it's possible.... But of course, if someone else changes what you want to keep, first response is... "what the hell is he doing there...!" So check and re-check in wikis before you save....
